I'm looking for a recipe for pineapple buttercream. I also have a newbie question about frosting in general. If I have a recipe that calls for all butter can I do half butter, half shortening or all shortening? I have some hi-ratio shortening I want to try. tia.

In general, you can sub out any amount of shortening for the butter in a buttercream recipe. As for pineapple buttercream, I'd make a regular buttercream but use pineapple juice for the liquid and pineapple flavoring instead of the vanilla or almond flavor that the recipe calls for. If you don't need the buttercream to be smooth, you could also put some crushed pineapple in it.

The recipe I use calls for 2 pounds powdered sugar, 1 1/2 cups Hi ratio, 1/2 cup salted butter, 1/3 cup water, 2 tablespoons clear vanilla. You could sub the water for pineapple juice or add a few drops of pineapple Loranne oil.
