Ive seen some photos where wires were stuck into the cake with fondant/gumpaste decorations on the wires. I'm guessing that floral wire isn't food safe. IS there a wire that is food safe? IF not, is there a way to make the floral wire food safe?

No, it's not really food safe. Most oxidizes in the presence of acids/fats/moisture.

Best thing to do is to insert a coffee stirrer/straw/posey pick in the cake and put the wired deco into that. You can coat them with melted chocolate, too.
