Bct... How Long Can It Be Frozen?

I am making a cake next week with a BCT of the Disney Princesses. I wanted to practice the BCT to make sure I could do it and it took me 6 hours. icon_eek.gif It turned out really great and I decided I would just keep it and use it next week so it won't cost me another 6 hours. Is it ok to keep it frozen for 6 days? I know you can keep icing in the freezer for a while, but I just need to know it will still taste good. Please let me know!

Yes, it will be fine. I have frozen a FBCT for a few weeks and they are fine.

Yes icon_smile.gif I believe you can freeze buttercream 2-3 months, so 6 days would be fine. You could keep it in the fridge if you want. But since you don't know how fast the cake will be consumed it is probably better to freeze it. Good luck with you cake. I totally understand about the 6 hour thing, I just started decorating again and I am really slow right now. Practice makes perfect and speedy! icon_smile.gif

I plan on doing my first FBCT this week and was wondering...do you freeze the filled in outline before you cover it in the same icing you use on your cake? It seems to me that you should, but on the instructions I saw (on another site) it didn't say specifically to freeze in between filling in and covering with icing.

No, just do it all at once, then freeze.

I was kind of wondering the same thing but what about fondant? I was interested in the rolled butter cream too. I was thinking if this was possible I could have my cousin make the cake for me while he was in the states. I'd need it froze for about 2 months.
