Any ideas? Can I use dipped strawberries to look like grad caps or would it not look right?
Can you refrid choco dipped stawberries and then take out in June weather w/o too much sweating issues?
Any recomends?

Never tried a mini grad hat from choco dipped strawberries, but I'm sure in can be done. My first thought though, would be I'd have to try to find strawberies that are all similar in size. No two strawberries are alike so you'd have assorted sized grad hats on your cake or cupcakes.

I've made choco dipped strawberries quite a few times, but don't add them to my cake until the last minute. I do know the last cake I made with choco dipped strawberries was for the family, and the leftover cake and berries were put in fridge in a cake container. It wasn't long before the berries started weeping.

Have you checked out the mini reeses grad hats from bakerella? They look pretty cute, and there'd be less chance of them disinigrating like fresh berries would. Heres a link to see what they look like.
