I'm whipping my egg white for my SMBC and they are not whipping up. I've been whipping them for over 30 minutes. I cleaned all my utensils with lemon juice prior to starting.
Can I save this? Please help! I haven't added the butter yet.
So...I answered my own question. I put the egg whites back on the double boiler and reheated them until warm to the touch. I then re-whipped them for 10 minutes and ...voila!...they stiffened right up. Added my butter and I have perfect SMBC. Thanks!
