What should I know about using fresh roses, fresia and some filler and leaves between the layers in a traditional tiered wedding cake?

Unless you know that the flowers were grown organically, without pesticides, you need to put down wax paper or plastic wrap where the flowers will go so that they don't touch anything that's going to be eaten. Or you can get flower spikes from Wilton that you stick into the cake and then stick the flowers in them.
