I finally finished my carousel cake!!! I have never been so nervous about a cake in my life! I didnt calculate all my hours but I'm sure it was at least 30hrs of work! Each horse was out with an exacto knife. They took about an hour a piece and there were 10 of them!!! I am so happy with the way it turned out and the birthday girl even asked if she could keep it and not eat it!

Thanks. This is the 1st cake I've made that I was actually sad that it was going to be eaten! lol.

Sleepless nights?? I have them too for all when I have to do a wedding cake. For days on end, I will do all the planning and calculating in my sleep.
So, I know where you are coming from, cause I do the same!!
Your cake looks amazing btw!! just love those horses that you did.
You mention that you cut them out with an exacto knife...can you explain?
