Every time I decide I want to spend a weekend day decorating, I realize that unless I have things prepared ahead of time then it can't be done in one day. icon_cry.gif I understand baking a cake the day before, but do you all have several types of frostings/fondant pre-made and stored so whatever mood hits you, it is available? I guess I should spend Saturdays (or weeknites) making these things ahead of time so when I get the chance on the weekend, I can just jump right in. icon_confused.gif To get better, I really should just pick any cake out of a Wilton book and just do it.............but then, make sure I have the right tips! ARGH! Guess I will have to try to get one of every tip to be sure I am always ready.

I hear ya! My most enjoyable cakes are the ones where the cake was made on Wednesday, then froze. The icing was made on Thursday and Friday night when the kiddos are in bed, nothing to do but assemble and decorate! Ready for a Saturday delivery. After all, decorating is the most exciting part of the cake process. (for me anyway)

The last wedding cake I made, everything was done in one day........Way tooooo exhausting! Not even enjoyable!

I am one of those people who works best under pressure. I could never let a cake sit and not decorate it all in one fell swoop, but that's just me, lol. I would rather do everything at once in one day, I just wouldn't do one spur of the moment. If that makes sense.... it's been a long day, lol.

i was sooo leery of freezing cakes, but guess what- they turn out great. i would just freeze smaller cakes, you can even freeze buttercream, then you're all ready. keep your eye out for michaels or hobby lobby, joanns, etc coupons. they always have 40% off coupons and those stores will carry "sets" of tips, so if you buy one of those, you should have all the basics, also, get a box of plastic disposable bags (with a coupon) and then you can be all set when the mood strikes, cause doing it all in a day is NOT enjoyable (at least to me)

i usually keep all my basic supplies on hand- 10x sugar, marshmellows, cake mix puding eggs butter, shortening extracts.....then when the mood stikes or when i get a last minute order.....I can whip up a cake baked-cooled-iced covered in fondant and decotaed in no more than 2-4 hours....the most time is spent waiting for my cakes to cool..... while they are baking and cooling i make my frsoting and mmf fondant.... of course this is now i didnt started out that way.

I bake in advance and freeze. I usually make the icing and color it a couple of nights in advance. The night before I decorate I take the cake out of the freezer, and fill my bags. When its time to decorate I unwrap my cake and decorate. So enjoyable! I did a sheet cake for a friend last week with less than 2 days notice, I was stressed out by it and absolutely hated how the cake came out. I told myself from now on I will only do a cake for someone else with at least 1 week's notice.
