I have a cake order next weekend and the customer wants buttercreme with fresh raspberries between layers... Is there anything special I should do or can I just spread the fresh raspberries on the butter creme and then put the top layer on ? It will be a three tiered cake using wasc and butter creme! Thanks in advance for your help!
I just layer bc with raspberries 'tossed' around. I also blend them into the bc... but it looks 'curdled'. That's just because of the extra water in the berries. Freaked me out the first time! But, in a cake, you couldn't tell.
