How To Make "ice" For A Beer Cooler Cake?
Sugar Work By sajoet Updated 5 Jul 2011 , 1:09am by bobwonderbuns

I have to do a cake for a client who wants a beer cooler cake. She asked that the lid on the cooler be open so that you can see "cans of beer" inside. How can I do the ice? I don't know that I can get any isomalt. Not sure what else I could use. Any suggestions?

boil sugar and water and pour it over ice let it dry then u will have ice

You can use sugar and water but it will be slightly yellow. Isomalt will give you clear ice. I used it to make the ice in the beer barrell cake in my photos.

Here is a link to the 'ice' I made. HTH!

I used sugar and corn syrup and boiled to hard crack stage, then poured into silicone ice cube trays and let cool. The only silicone trays I could find had a dice design on them, but I did love how the ice cooled and looked like it was sweating. here is a link to my cake. http://cakecentral.com/gallery/1828287

wow!!! that's really nice, are the beer bottles real??? can you give me exact recipe? thanks

Thank you! The recipe is this:
1 cup sugar
1/4 cup light corn syrup
2 T water
Boil to hard crack stage.

I make it all the time. I found a recipe in American Cake many years ago. Use vodka in place of water. use only enough to moisten the sugar. heat to hard crack, pour onto crumples foil. when cool break it up. I tried it in the microwave. Did not work, must do stove top

Do you need to do anything to the silicone mold such as treat it with oil before you pour in the sugar?

nope, I just poured it right in the mold, and it came right out when cool.
I agree with kake4umjp, don't use the microwave, do it on the stovetop.
