I don't see why they wouldn't coat well in chocolate since we are able to buy chocolate covered doughnut holes already. Not sure how they well they will stay on a stick.
Just remember - doughnuts and cake are not the same. make sure you market them as what they are - cake bites or doughnut holes?

i've never made them before but i'm very leary about how people say they taste "gummy"
If they taste gummy - they were over saturated or not allowed to dry long enough before dipping in the coating of choice. They should be kind of super dense cake-fudgey, if that's a word.
