I've agreed to make my sister's wedding cake and was hoping to make a three tier ginger cake. Does anyone have a good recipe for a cake I could bake a few days before the wedding? Also does anyone know how to up scale cakes?
Also can anyone tell me when is best to put the buttercream on and when to add the sugarpaste when making a wedding cake? Is this days before? I'm quite an experienced baker but have never made a celebration cake before or used sugarpaste.

I can't help with the recipe but... I bake two days prior to event, cool, fill, and crumbcoat. Then I leave it to settle, at room temp, overnight. The day before I decorate.
