Dear all,
I have made caramel for cake filling, it contains condensed milk , brown sugar, very little cream, and it's been in the fridge for about 3 weeks now! I need some of it for my cake tomorrow! it looks fine, it doesn't smell any bad, do u think that I can use it?

I think depends on who you are serving it to.... I probably wouldnt risk it for anyone outside my immediate family. I had a rasberry buttercream in the fridge a few days longer than was acceptable but it only stayed in house and i know my family have strong stomachs! It tasted great and smelt fine but at least knew IF anything had happened they would forgive.
Guess this one is a judgement call only you can make!
