Bavarian Cream Or Vanilla Pudding Filling

I'm making a cake for a May 28th, 2011 outdoor wedding here in NY state.
The bride wants a 4 tier cake with a vanilla pudding or Bavarian cream filling.
I am going to be battling NY heat & if that weren't bad enough, she is having it at a state park that is has "it's highest point along the trail at 2247 feet."
I will basically have to drive up a mountain to get there.
I'm so scared that the pudding in the layers will slide (I will be assembling the cake on-site.)
I need a thick, good tasting pudding recipe that will hold up to the heat (non-perishable, non-refrigerated) and the incline of the road.
I've posted a pic that was taken from the height of the pavilion where the reception will be held. You can see the road waaaaay down on the bottom.
