I found this recipe and can't stop making them! They are so easy the kids could make them but then they eat them so whenever I want something sweet, I whip up a batch. I made them last Easter into tiny egg shapes and decorated for the church egg hunt. They will hold their shape well and won't get dry.
The Easiest Peanut Butter Cookies
1 cup peanut butter
1 cup sugar
1 egg
Mix well and bake 8-10 minutes at 350.
Optional: peanuts, chocolate chips, pecans, drizzle with melted Nutella or chocolate

I have been using that recipe for at least 10 years. It's great. The cookies are a little crispy though. If you want them to be a little softer and puff up a bit, add 1 teaspoon of baking powder.

These are the peanut butter cookies i grew up on!! my absolute favourite!
As one of the first things i ever baked, i can say from experience that they really do burn quickly, so keep an eye on them!
