Sponge Or Maderia?

Hi

Just wondered when you all make a sponge cake and you are going to ice it with sugarpaste icing, do you make a sponge cake or a maderia cake?

British cake decorators use either Victoria Sponge Cake or Madeira Cake.

I bake either Madeira or Victoria sponge, it depends on what you are baking it for, if your going to make a cake with a lots of decorating with sugarpaste ie Wedding cake or tiered cake I would use a madeira cake, for all other cakes I would use a Victoria recipe. HTHx
