I got a order today I do not know if I should or how I should tackle.its a round stacked cake covered in fondant don't sound bad here's the catch 6 ft tall. Some of the layers can be Styrofoam. I need advice tips anything you can give will be appreciated.I also need a good red velvet recipe
First of all, how many people are needing to be served? From that, you can figure how many tiers need to be real cake, and how many can be styrofoam.
I would probably put the real layers at the bottom, and the lighter styrofoam ones above. That way the weight won't be an issue. Peg and stack the real cakes. Peg the top layer of real cake, then stack the styro. They won't need to be pegged (doweled).
For that tall a cake, you will probably want to have spaces between some of the layers, to decorate with flowers or whatever.
