I will be baking a 12 x 18 sheet cake this Friday for delivery Saturday. Since I will be using cream cheese icing does the cake have to be refrigerated? That size cake will not fit in my fridge.
It should be fine for that length of time. But I would let the recipients know that any leftovers should be refrigerated.

I use buttercream for the crumb coat and trim because my buttercream has fewer behavior problems.
