You are probably going to end up with more cake than you need, because 20 servings really isn't alot of cake. For me I like to start with shapes that sorta match what I am going for, though there are those that will start with sheet cakes

I would start with rounds, adjusting the sizes as you go up. I'd figure out how tall you want the cake, and then base your width off that.
You are going to end up with way more than 20 servings though.
