lmb, will the condensation cause the color to run if you are having a pretty colorful cake? I've always been afraid of that, but really like to put my cake in the fridge sometimes.... Thanks for your help.

So should I put the cake in a box to help with possible condensation?

I've never had a problem with condensation and I don't put them in boxes. If you live in really high humidity you might, but it gets pretty humid here (New England) in the summer and I have never had a problem.
