Why Does My White Chocolate Look Yellow?

I'm trying to make a white ganache to cover petit fours and it's coming out sort of a creamy yellow color.

First I melted a bag of white chocolate chips with heavy cream. Yellowish.

Then a bag of white candy melts also with heavy cream. Same thing!

Help??

My white chocolate has always come out that color. . . icon_cool.gif . . .is this the first time it's happened? Are there any lumps in the chocolate that are really hard?

white chocolate has a creamy color to it, it is not a pure white color. The off white color is because of the cocoa butter in the chocolate.

The same thing happens to me. Someone somewhere knows how to achieve a white look with white chocolate or something that is maybe mock white chocolate!!! I've seen several cakes on here with a really white white chocolate. Check out some of the dipped strawberries that are dipped in a white chocolate to look like a brides dress! Tell me how that is white if it's white chocolate. I'm pretty sure the flash from the camera didn't make it THAT white!

I know there are some "deluxe" candy melts type of chocolate that is pure white. I can't get to my bag of them right now, to look at details, because I'm not at home.

No brand is going to be pure white, but the white chocolate I prefer for taste and color is Guittards, not chocolate chips, it comes in a 5 lb. block. Some of the most expensive brands such as Valrona are very yellow.
