Cake-Pop Make Ahead Time

How far ahead do you think you can make cake pops ? They are encased in the coating....

I just want to get a jump on Valentine's Day.

I've made mine as far as 2 weeks in advance. I freeze them until I need them. They defrost great. I've never had any complaints or issues.

Really- you just freeze them with the coating on? There isn't any problem of getting soggy insdie the coating?
