Ok - I went to make a cheesecake filling. I want it stuffer. Now if I were making buttercream, I'd add more powdered sugar. Should I do the same? I dont want it super sweet but I am not sure what else I can use? Any help would be awesome!!
Just remember that if its too sweet you can always add a dash of salt to cut the sweetness down
adding more powdered sugar seemed to "steal" the cheesecake flavor. I dont want it to be a cream cheese buttercream, I want a nice dense cheesecake filling.
So I did add more powdered sugar and a pinch of salt but it still needs to be more stiff and I dont want to add more powdered sugar.

I'm also making a cake this weekend n using cheese cake as a filling . I always do add more cream cheese to stiffen but needless to say i do add a bit if powder sugar n use lorranns to flavor ( a lil goes a long way )
How about adding unflavored gelatin to thicken the cream cheese. I've never tried with cream cheese but I added gelatin in my custard filling and it worked great.
Marshmallow Creme all the way! it taste great, stabilizes the filling and it's cheap! I even have a homemade version and it comes out just as the brand name from the store. if U want it PM me.... but that's all I use in my fillings.

All this time and I don't recall ever using Lorann flavorings. They don't have an artificial taste? How many have you tried?
