everything that I have read online and such and from watching tv says dont ever put fondant in the fridge. you get condensation beads on it and it could cause lots of problems, having it out on the counter over night isnt going to hurt anything.
I've had fondant covered cakes in the fridge overnight with no problems. Just make sure you have enough time to let the cake come to room temp. There will be condensation on the fondant, but it will evaporate if given enough time, you just don't want to touch it until it does.
I use Michelle Fosters fondant and always put my fondant covered cakes in the fridge. In fact, it helps keep the cake/fondant from sagging. Just make sure they are not in an airtight container and be sure that there are no strong odors in your fridge or the cake will absorb that (i.e. onion).
