For a wedding cake - do most people use the 3" deep pans or the 2" deep pans?
I use 3" and 2" pans, but I generally make 2 layers around 1 3/4 - 2" high, which are leveled, torted in two, to end up with four 0.75" layers. Filled and iced gets them to just over 4".
