Help! Cook N Serve Pudding Vs. Instant Pudding In Cookie

I am using a Gingerbread cookie recipe from this blog: http://pleasefeedthebears.blogspot.com/search/label/Christmas

It calls for 1 6oz package of butterscotch pudding.

All I could find was two 3.5oz boxes of cook and serve jello pudding - not instant.

What do I need to do to make this work? Can it work? I want to roll the cookies out and be able to cut shapes with it. Can anyone with more experience help me? Thanks!!

It doesn't look like it would work, but I'm not sure.
