This may be a silly question, but other than adjusting cooking time, would I need to change a recipe at all from a pound cake cooked in a bundt pan to cooking it in a few 8 or 9 inch rounds?

I would also lower the temp to 325, and then like you said; adjust the baking time. I've done it many times, and had good results.
