Can anyone give me some tips on doing cupcake cakes? I would like to make one for a party I am going to, but have never attempted to do them. Are they hard to get smooth? Wouldn't they move around on the board while you are frosting them? Any help would be great. Thanks. Keli

I have never made a CCC before but from what I have read about them you but a little bit of frosting on the bottom of the cupcake and then arrange them. That way they won't move around.

When you take them out of the oven, & before removing from the pan, put something semi-heavy on top...I use my cutting board...and leave it on there for a few minutes. The weight of the board will flatten them, making it easier to get your icing nice & flat & smooth.

And yes...put a small dollop of icing on the bottom of the cupcake before you place it on your board or platter or whatever. Sometimes, if there's a gap between any of them, I'll pipe a little bit of icing in between them just to make sure they're not gonna slide around.

I just made one a few weekends ago. It's fairly easy to do. I'll try to post,but haven't had any success in doing so in the past.

I did not glue mine down, I'm sure it was taking a chance but I figured if using the icer tip, most of the frosting would be in placeand not require alot of pulling. I highly recommend having an icer tip. thumbs_up.gif Not just for this but any cake, it just makes the job much quicker and uniform.

I just arranged them by flavor, half were Choc., half were yellow. I also arranged them where if any were less full, they went torward the edge and I just madesure they had alittle more frosting on them to level the top.

The kids loved them and it was so much easier than worry about them all getting the same size slice. All I had to do was worry about scooping ice cream. The adults liked it because all they had to do was reach one, step away and eat.

Give it a try, I think you'll like it!

I have never done one but want to.

Do you ice each one first to help the icing go on smooth or what?

vitade, go into your paint program and resize there.

I made my first ccc a few weeks ago and didn't yet have the icer tip. Just plop the icing on top of your arranged cupcakes as if it were a cake top, and ice smooth.

Yep! thats a good idea! But if you dont want to do that, you can fill the cupcake papers a little less than half (I seen it actually work) or bake them in a lower heated oven...thats what I do and they come out flat.
