What am I doing wrong, my cream cheese buttercream does not crust up, do I have too much fat in it, I use butter, crisco, and liquid is whipping cream-gives it a lighter texture, please help, wedding this weekend. icon_cry.gif

maybe try adding some meringue powder

can you post the recipe? Without knowing the amounts of everything you're putting in, it's hard to tell you what needs to be done.
