I'm making a red velvet cake filled with cheesecake filling and I plan on covering it in MMF. I need to do it tonight, as I work all day tomorrow. Will I have to refridgerate or can it sit out? I believe I'm going to have to refridgerate due to the cheesecake. Am I right?

Thanks
Karen

cheesecake or cream cheese? If cream cheese, there is enough sugar to preserve it for a few days, if the icing starts out thick enough. If cheese cake, I dont' know

I was going to do it with cheesecake, but if cream cheese filling will be OK sitting out, then I think I will just do that!

I have had red velvet with cream cheese icing left-covered- on my counter for several days with no ill effects. A food science professor told me that most icings can sit on the counter for a week with no problems-assuming you use safe practices to make them.
