Hello,
I've done smoothed several cakes with the viva method and absolutely loved it. But, the last three cakes I've done I just couldn't get the icing smooth. I don't think I'm doing anything different. Has anyone had this happen before? TIA

If you use the fondant smoother not your hands it works better. I also started using the foam paint roller (Melvira Method). Takes half the time, and works better on edges and smooths WAY better than papertowel method ever did!

Possibly, your icing is stiffer than usual. I didn't notice where you live, but if it's cold there now, that will make a difference in the consistency of your frosting.

Another possibility is you may have let it set just a little too long. The air is dryer in the winter also. This gives you less working time. As soon as you can touch the frosting and it does not stick to your finger, it's ready to smooth.

Thank you both so much. It is cold here now and my kitchen is really drafty! I'm sure that's what did it. I didn't start having a prob with it untill it got cold outside. Thanks again! I'm definately going to have to look into the Melvira method as well. I've heard so many people raving about it!

I swear by the foam roller. An added advantage is it lets you get much sharper edges (especially on the square cakes).
