How soon should u cover your layers in fondant? The other day I made a small cake and everything came out perfectly. Then after a few hours the fondant started to crack and ripple on the sides. Does a freshly baked cake "settle"? Should a cake be covered the next day?

Cakes do settle. Fill the cake and let it settle overnight, before you cover with fondant, and you'll have better results.
