Question About Mmf

I tried one of the MMF recipes found in this site and it tasted delicious. However, it was very soft and I had a hard time making it look even and perfect. Any little imperfection on the cake seemed to be magnified. My experience with fondant up to this point had been the store bought kind mixed with gum paste. Any suggestions on how to deal with the softness issue? Should I have added more sugar?

You might need to add a little more sugar, also be sure you let it rest. It firms up a little as it cools icon_smile.gif

Thanks for the response.

I let it rest for about 6 hours. The texture was fine while I was kneeding it, but then it got too soft.

If you let it rest and it's still too soft, you may need to add more powdered sugar to it (be careful though since too much will make it tear).

You can add tylose to it to if you want it to dry faster/harder or to make flowers and figures with (tylose pratically turns it into gumpaste).
