Ok this isnt about cakes but i need some advice on making candy. suckers to be exact. I have a recipe i have the flavoring and i have the molds and sticks. Have all the supplies but i only have 8 molds and i think my recipe makes more than that. How long do i have to use all of the mixture before it hardens????? Am making dino suckers and gummy candy.

Do you have 8 seperate molds with several cavaties per mold or one mold with 8 cavaties?
Susanmm23 this gives you a wonderful reason to go to hobby lobby and buy more molds at half off.
You have very little time to get the candy from the stove into the molds. It won't save for another round. With the recipie I use I can make 25 suckers at a time and getting the last suckers out is a real work out.
If you can't go get more molds what you can do is put a cookie sheet out and cover in foil, then lightly spray with pam or something like it. When you have extra syrup at the end just pour it onto the cookie sheet. You MUST score it immediatly! Or you will end up with a HUGE piece of candy. If you score it with a knife then when it cools you will be able to break it into small pieces. Becareful when you are breaking it up by hand is can be very sharp.

you can place your hard candy in a double boiler (after its cooked) over hot water, it should buy you some more time.

I have 2 molds with 4 cavities each so 8 cavities all together. I got the molds last year on sale for 50 cents at hobby lobby they dont sell them there any more. cani decrease the amount of ingredients o make a smaller batch????? or is it an all or nothing typer recipe???

I have never tried to decrease the recipe before. If you try it let us know how it goes.
I have also never tried putting it in a double broiler over water. Tell me Peg818 changing the temperature again doesn't ruin it. Do you have to watch it very closely for the temperature.

i've never really kept that close of an eye on the temp after i've gotten it to 300, which is what my recipe calls for. As long as you aren't adding anything else to it you should be able to keep it warm so that it will stay plyable. you figure when they are pulling sugar, they keep the candy under hot lights so that the candy can be molded and shaped.

ok i think i will try halfing my recipe. i would rather not have enogh to fill all my molds then not have enough molds to fill. Thanks for all of your help ladies!!!1

ok here is my recipe i got it from the lorann oils web site.

2 cups granulated sugar
2/3 cups light corn syrup
3/4 cup water
1 dram lorann oil
1/4 teaspoom orann food coloring (optional)
powdered sugar (optional)


it doesnt say how many lollipops it makes. do any of you use this recipe if so can you please tell me how many it makes????

I use a recipe very similar to these and it makes about 25 pops.
