I recently made an "apple pie cupcake". I think it could easily be adapted to peaches. I made a simple graham cracker crust (butter, graham crumbs, oatmeal, pecans, cinnamon) and pressed a small amount into bottom of CC liners. Then i baked my standard WASC CCs (but i think spice would have good too). I filled them with pureed apple pie filling, topped them with cream cheese icing with a "thumbprint" of Smuckers apple cinnamon topping, and then a light dusting of cinnamon. YUM!
