Need Tips On Making A Dense Chocolate Cake To Cover In Mmf

I need suggestions on how to make a dense chocolate cake for a three tier wedding cake. I'm still new to baking. I normally use a cake box mix but have found it to sag a little after putting mm fondant on. I heard you can add buttermilk or sour cream to the batter but I'm not sure how the cake will turn out or how much to add. Has anyone added buttermilk or sour cream to their cake mix before? Any tips?
I love the Chocolate Chocolate Cake recipe from the Wilton website. It comes out dense and holds up to carving, and everyone seems to like the taste. It's a simple recipe too.
