How Much Buttercream Can You Make At One Time?

This is just a curiosity thing really. My mixer maxes out (well, I don't want to push it to see if it spills all over the place, so 'maybe' it could do more, but, you know! icon_biggrin.gif ) Anyway, my mixer maxes out at 6lbs of powdered sugar and 6 cups of fat.

I'm trying to remember what my friend's allowed me to do when I was making buttercream with her small KA for her wedding. I just remember having to make batch after batch after batch! icon_biggrin.gif

So... how far do you push it and what mixer do you have? Buttercream is the one thing I HATE to make, so I like making big batches and then freezing what I don't use for later projects!

I have a Electrolux DLX 2000/Magic Mill Assistent (mainly praised for being a heavy duty bread making mixer). It has an 8 quart stainless steel bowl (and a smaller whisk bowl too).

I have a 1000 watt Viking 7-quart mixer. I mix 7-1/2 pounds sugar, 7 cups of fat and 12 oz. of liquid. The automatic shutoff is tripped every time. I know I'm pushing the limits of the machine, but I need the icing to rise over the top of the paddle.

I HATE making icing, too. It's such a huge mess! I have to use toothpicks to dig the icing out of the crevices in my mixer.

Double recipe of Wilton's buttercream recipe. I have a small KitchenAid 4 1/2 Qt., 300 WATTS.
