I know how to store buttercream. However, I hope to make a batch of royal icing this week in order to practice brush embroidery. How long can I store this? Do I store on the counter, or do I freeze, or I do put it in the fridge?

store it on the counter, it will keep for up to 2 wks (i think) if made with meringue powder. You will need to re whip it before using it

I've also frozen mine if I won't need it again for a while (more than a couple of weeks). It works well. You just have to defrost and re-whip it.
