Hi, I have stacked cakes before so dont have a problem with it as such. My question is can I stack a fruit cake on top of a sponge?

If you use a proper support system then you will be able to stack anything on anything. You just have to make sure the dowels or columns or SPS is holding up your upper tier and that it's not resting on the cake below.
