I made way too much chocolate ganache - I know I can make truffles with it, but I am wondering if anyone has ever frozen the ganache or truffles? I am thinking I can make up a bunch of truffles and freeze them until I need them. Thanks!

Yes to both queries...
I freeze my ganache all the time...for up to One Month.

I keep mine in the fridge for a couple weeks...never thought about freezing it!!

I think I make magic ganache. I put my leftovers in the fridge & when I go to get it - the container is always empty, just a little tiny bit in the bottom icon_biggrin.gif
