I'm going to bake a cake for my birthday next week and trying marshmallow fondant for the first time. Will one recipe that yields 3lbs be enough to cover a 6 inch and a 9 inch cake (both cakes are about 2 1/2 inches high?

Yes, one recipe should cover both tiers. There is a neat chart on Global Sugar Art's website that can help you determine how much you'll need

Thank you! I'm glad to hear that, hopefully i'll have enough left over to use for a little decorating, i'll also be trying gumpaste flowers for the first time too.
