I've been looking for a recipe for a good carrot cake that has a nice dense texture. I have to make a 12x18 anniversary cake but I don't want it to be too soft as I'm going to put fondant on it ...but I don't want it to be too dry either.
Any suggestions?
This is my favorite carrot cake recipe - it's from the Company's Coming Cake cookbook. I've doubled it with no problem.
1 cup cooking oil ( I usually do 1/2 cup oil and 1/2 cup unsweetened applesauce)
1 1/2 cups sugar (I use 1 cup)
4 eggs
3 cups grated carrot
2 cups all purpose flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
3/4 cup chopped walnuts
Preheat oven to 325 degrees. Beat cooking oil and sugar together in mixing bowl. Beat in 1 egg at a time. Stir in carrot. Add remaining ingredients. Fold in to moisten. Spread in greased 9 x 13 pan. Bake for 45 minutes.
