I am looking for a good vanilla cupcake recipe that domes really nice. I have tried one from Elisa Strauss, Amy Sedaris, and Magnolia bakery. While all of them taste excellent, I can't get any of them to dome the same way a chocolate cupcake does. Any suggestions are greatly appreciated!

Hi
To get a really good dome on your cupcake, bake at 400 for 5 minutes, then bake at 325 for the remainder of the baking time. It works great. Also, look on www.cakejournal.com. There's a really good vanilla cupcake recipe, and she discusses getting the dome as I stated. I made 100 cupcakes for my Grandson's Christening, and both chocolate and WASC turned out perfect. I didn't have any "bloopers".

I agree with Iluvpeeks, except I turn my oven down to 350. You should check them after about 18-20 minutes because it will take a slightly shorter time to bake them.

I bake at 375 the whole time if I want a dome, and at 325 if I want a flat top!
