after i ice a cake with a crusting buttercream do i immediately cover with fondant or do i let the icing crust...and how does fondant stick to crusting buttercream?..

hi

you want the buttercream to act as the 'glue' for the fondant, so my advice is to put thin layer of buttercream on the cake (smoothly) an then immeiately cover with thefondant.

Good luck - I must admit that I now put mazipan on all my cakes for a better finish. but you could start with a thin layer ofsugar paste,brush with alcohol (ie vodka) then a second layer. Alternatively have a reasonably thick layer of fondant, which should give you a reasonable finish. icon_biggrin.gif

where do you get your marzipan? I've been wanting to try covering my cakes with it first but can't find where to buy it in bulk.
