Ok I was tired of separating eggs and if I wasnt making yellow cake the yolks were a waste. Also I was driving my ocd mind crazy with the fear of not killing everything (even though I heat to 170, the mind of a germaphobe
)
I bought powdered egg whites and tried using them instead of the fresh egg whites. I reconstituted them and then proceeded as usual (still heated to 165 for the sugar to be a good syrup but it was SOOOOO much quicker because they werent cold. Took like 4 minutes instead of the 15 I was used to) It worked perfectly and the flavor was exactly the same! So now I can rest AND shave a bit of time off AND not waste yolks
