Does anyone know how long it will keep? I made a batch two weeks ago for a cake I was doing and put the extra into a container and stuck it in the fridge expecting to use if within a few days. I haven't and I want to know if it is still okay whether I use it now or freeze it.

I think it's 2 weeks stored on the counter. I don't know if refrigerating it will extend the life.

I've frozen it with good success - just have to re-whip it!

@deah - I think, by reflex, I stuck it in the fridge 2 weeks ago. icon_wink.gif

@TNTFundraiser - I've frozen it before, but usually shortly after making it. Do you think I'm okay to freeze what I have left now?
