So I will be doing a cupcake tower for a wedding which is Oct 2010 (I know FAR away lol but she loves my cupcakes). I needed some ideas for fall cupcakes flavors. These are some I was thinking about:
apple (carmel glaze)
pumpkin or sweet potato (cream cheease frosting?)
banana nut (maple frosting)
red velvet (cream cheese frosting)
Any other ideas? I will decorate each with some fondant flowers or whatever the bride would like.

Thanks much,
Catherine

pumpkin was the first that came to my mind there with a nice spiced cream cheese icing (add cinnamon and ground cloves)
how about ginger with ginger fudge icing?

I made this cake for a fall wedding - used the pumpkin cream filling recipe for filling - Bride loved it, but she actually requested apple pie filling that I tweaked to make it taste better. But my favorite is the pumpkin cream - wish she had chosen that - but.............it's not my cake

1/2 tsp salt
1 egg
3/4 c brown sugar
1 c unsweetened apple sauce
1/2 c butter unsalted, softened
1 tsp vanilla
mix all dry ingredients together in mixer, add butter. mix until crumbly, mix together all wet ingredients, slowly add to dry mixing on med. mix for 2 min,
fill cupcake pans bake at 350 for 18 min.

i use sheet caramel and cut circles and lay them on top of the cooled cupcakes.
