About how much fondant would it take to cover a double layer 11x15? It's about 2 1/2 inches tall. I've never covered one and I don't want to roll out more than I need, cause, you know, it's not fun to roll out..haha. I have 5 pounds of it.

According to the above charge for a 11x15x2 you need 60oz of it. I would add a little bit more for the extra 1/2".
