I'm making a cake that needs about 5 people on it. I tried a bit with fondant but i feel it was to soft and they keep coming out looking like cartoon characters. lol

I was thinking about modeling chocolate, does anyone know if that would work better?

And if anyone knows of any youtube videos that shows how do do realistic faces let me know.

I prefer mixing fondant with tylose powder to make figures, but you can also use gumpaste and fondant, it just dries too quickly in my experience.

For realistic faces, the BEST tutorials can be purchased here, they come straight to your email: http://www.extraicing.co.uk/#/sugarcraft-tutorials/4542219227

I agree with everything FlourPot has said. I have Lorraine's Tutorials and I absolutely love them! Good Luck.
