How Long In Advance For A Fondant Cake
Decorating By miloke Updated 29 Jul 2010 , 6:27pm by DeeDelightful
I am making a large cake covered in Fondant. I was going to bake it and cover it in Buttercream and refrigerate it on Tuesday night and on Wednesday night cover it in fondant and decorate it. I will deliver it Thursady morning. Is that too long from the time I make it to the time I deliver it?
I bake on Monday/Tuesday, cover on Thursday or Friday and deliver on Saturday. Fondant covered cakes will stay nice and fresh for at least three days. Now I also freeze my cakes between baking and covering so that helps a lot.

Has anyone used any other frosting besides buttercream as a crumb coat for a fondant cake?

Never tried it, but lots of people are using ganache under fondant for a sharper, crisper look.
